Search any means that of the hashtags inserted in the search bar, all the posts containing any one of them will be listed on search. On the other hand, Search all means that only those posts will be listed containing all the hashtags that have been entered in the search bar.
It is like applying an OR and AND condition on the hashtags for rendering search results. You can also select both but that will essentially mean search any because all posts containing any of the searched hashtags will be shown in the search results.
